I'm really not sure who would win though. Dooku had better force abilities definitely, strength would probably be slightly be Mace. Strategy, maybe Dooku. I'm not sure. But Dooku is more defensive and lures you into traps by exposing weaknesses and exploiting them. Mace on the other hand is somewhat more aggressive. This can be good, but against Dooku's fighting style, but maybe not too great... But then again, Dooku has force lightning. But Mace did sorta defeat Palpatine. And Dooku did very well against Yoda. This is a very tough call.

I think it would be a very long lightsaber duel with mostly lightsabers and very little force. Mace will eventually best Dooki though,

The reason Mace did so well against Sidious (although I still believe it was an act) is because Sidious is a crazy Dark-Sider that has huge amounts of uncontrolled energy - Dooku, on the other hand, is more reserved. He doesn't show emotions during his duel because he has them reserved. That's why I think Mace wouldn't do as well against Dooku - there won't be much Dark Side to feed off of.
In lightsaber combat, I think Dooku is a more skillful duelist. He has style when he fights, being a fencer, and can probably defeat most people. I think he was truly the best of the Order under Yoda, and Mace was probably considered another amazing fighter because he created Vaapad, but that's it. Kenobi even tells him he's a great fighter because he's the "Creator" of his style - that proves that they base Windu's success on his creation.
Not to mention that Dooku is both taught in the Light Side and the Dark Side. He understands both sides of the Force which is a huge advantage IMO.
So in the end - Dooku. More experienced, a better fencer, and being a Sith/Jedi gives him a distinct advantage.

Dooku defeated Sora Bulq, a Vaapad practitioner, in 5 seconds, all it took was one blast of lightning, Vaapad leaves the user vulnerable to force attacks like lightning and therefore Mace is at a disadvantage. When Dooku defeated Sora Bulq , he noted the weakness of Vaapad, that the anger created by the siphoned darkside energy can be used against the practitioner, since the Jedi becomes unbalanced . |

Mace is just a master of Vaapad, is also powerful, perhaps equal to Dooku, but not as experienced. So Dooku. |

If the poll had not been locked, I would have chosen Mace. He would have beaten Sidious and in my opinion is more wise, but not necessarily more powerful. Dooku is an old man as well, Mace would have the agility advantage to perform kicks and twists that an old man like Dooku might not be able to do as well.
