I saw Yoda vs. Sidious and couldn't resist. I'm pressed for time, so I'll post my opinion later.

Alright first of all this isn't really a fair contest in a 1v1 fight as much as I like Grievous well Mace Windu would wipe the floor with him. Mace was the best blade master in the order at time he mastered all seven lightsaber forms and created his own form Vapaad. He was also the only one too successfully be able to use Vapaad even the co creators of it couldn't handle the form as it brought them too close to the dark side. Grievous on the other hand was trained in many forms but was sloppy and he couldn't coordinate them all in a perfect fighting fashion he was able to overwhelm his enemy's as most Jedi couldn't defend against all 4 of his arms. Even Count Dooku who was Grievous mentor said he wouldn't be a match for Windu or Yoda. Windu even managed to take down Sidious in lightsaber combat.
Now Windu also has the force which is a major advantage over Grievous and that is shown when he used force crush to severely injure Greivous. Windu also was able to use Shatterpoint which is the ability to find a weakness in a enemy or object and be able to exploit that weakness this is one of the reasons he beat Sidious. Now in a fight Windu would have much better fight smarts than Grievous he was a skilled tactician but he was also reckless though Grievous was able to counter and match people's fighting styles in his mind. Grievous is a dangerous enemy because of his cyborg enhancements but against a skilled warrior like Windu he would get destroyed. Grievous may be able to defeat dozens of padawans and Knights but he wouldn't be able to defeat any master on the Jedi council.

Grievous in the movies is the official one though, and Mace even said himself that Grievous would run and hide from the jedi because he was a coward. Of course, who wouldn't be when you're put up against force sensitive beings while you yourself are not? Grievous still is a fairly good duelist but one of the reasons for that is because he always has 2-4 lightsabers in hand. Now, if he had one and had to go against a jedi, well, he'd be screwed. Although him having four and going up against Mace would really make no difference to me, Mace is the obvious winner. Mace vs. Palpatine was about even, and then Palpatine can beat Dooku, and Dooku can beat Grievous. In fact, him and Grievous even had a little mini fight in the original animated series. It wasn't really a fight though because all Mace had to do was just force crush Grievous' organs, but it still proves that he could beat Grievous by lightsaber or the force. So yes, definitely Mace.

He maybe wouldn't of run actually. Grievous is very stupid and cocky. When he went against obi he thought he would win. But then he ran. Obi is very skilled. Like mace.

I have a feeling that if the two got into a duel with each other then Grevious would either flee and run or cheat and have his army cover for him. Stand alone he's not that powerful. The Gungans realized that in Shadow warrior as well. They shut down Grevious' army and after he was captured when standing alone. To me he's more talk then game. But is good in some instances.

Mace by far. He has the force, is one of the best Jedi, and Grievous would probably just run away, or rely on his droids.

But the way I see it is him running away and relying on his army is more like Mace against some droids not a true duel. He lost to a couple of Gungans as said already above without his army at hand. So I'm not sure if he would lose in five minutes necessarily.

How would Mace loose to Grievous without the force, when he beat Sidious without hardly using it. Sidious used it greatly in that duel, yet he still lost.

As much as I love General Grievous (and I really love the dude) it has to be Mace. Mace is so much more powerful and he has the Force. I'm pretty sure you all saw what he did to Grievous in Star Wars: Clone Wars. And keep in mind that Grievous was overpowered in that series (which just made him more awesome, IMO).

For once, I'm actually going to analyze this battle. Lightsaber combat: Mace uses a very aggressive and physically demanding forum of lightsaber combat, namely Vapad. Grevious, on the other hand, relies on his four lightsabers to be to much for any of his opponents, and to my mind, doesn't really use any specific forum of lightsaber combat at all. Strength: Mace is strong for a human, and augments his blows with the force. Grevious, though not being force sensitive, is incredibly strong due to his cybernetic body. Force abilities: Mace: extremely strong. Grevious: lets not even go there. Agility: Mace practices Vapad, which is not totally unlike Ataru in the sense that it involves many flips, leaps, and roles. He also holds the record for longest leap at the Jedi temple. Grevious can jump long distances, but cannot enhance his movements with the force, so there is only so much he can achieve. Outcome: while the two might not be *miles* apart in several areas, Mace's skill with a lightsaber would be no match for Grevious, who practices no forum of lightsaber combat at all. It's like he's a failed attempt at an Niman master...........

As Unlimited said, Mace pretty much crippled Grievous without even drawing his blade. Even if they did fight, Mace would practically obliterate him. He has the force, his very own lightsaber style and even managed to defeat Sidious! I can't think of that many scenarios where Grievous would win.

That would explain why. I never watched that I only watched the The Clone Wars not the old version. I probably should though. But where? If I remember correctly, it's a three part series which I'm sure you can find on YouTube. It was a fun show but don't expect amazing storylines like the ones on TCW. Yeah I heard some review for it already. Some were eh okay but from the sounds of it doesn't compare to what TCW offered. There was some talk on it on the site not to long ago I believe that's where I was discussing it as well.
